Meatless Monday
Black Bean, Roasted Peppers & Feta Cheese Quesadillas
Ingredients:
4 tortillas
4
roasted red peppers, sliced
7oz feta cheese
7
oz black beans, cooked
lime
sour cream, if wished
olive oil
Preparation:
Heat a flat pan with
a bit of olive oil and place the tortilla.
Spread the beans,
peppers and crumbled cheese on one half and close the other. Cook for 2-3
minutes and turn on the other side for the same time.
Repeat with the rest
of the tortillas.
When ready, slice and
serve with some hot sauce, sour cream and lime.
